The hills surrounding Livermore Valley Wine Country are sporting the green of the Emerald Isle, St. Patty’s Day must be just around the corner! Celebrate with our Irish Bonnie lass and be sure to try her recipe for Corned Beef and Cabbage with a bottle of Charles R Barbera, Cabernet Sauvignon or Primitivo. Sláinte! (Which means Cheers in Gaelic or Irish!)
Ingredients & Instructions
- 1 Beef Brisket
- 1 Bottle Charles R Red Wine, plus water to cover
- 1 Packet of spices, or whole pickling spices
- 4 Yellow Onions, halved and sliced
- 1 Garlic head, peeled and sliced
Cook on the stove, in your crock-pot, or in the oven. In the crock-pot or on the stove, bring to a boil, then simmer for about 4 hours. In the oven, cook for 4 hours at 350 degrees.
Then Add…
- 4 Carrots, peeled or scrubbed and cut into bite size pieces
- 4 Potatoes, peeled or scrubbed and cut into bite size pieces
Cook about 30 minutes longer, until vegetables are done.
Add 20 minutes before serving:
- 1 Head Cabbage, halved and sliced
- To taste: salt, pepper, honey
Serve with a bottle of Charles R Barbera, Cabernet Sauvignon or Primitivo. Sláinte! (Which means Cheers in Irish Gaelic!)
