Fresh Tomato Basil Linguine paired with Sangiovese

This recipe is so simple, yet amazingly full of fresh summer flavors. Our June Wine of the Month, 2016 Sangiovese is a food friendly wine and pairing with the tomatoes accentuates the fruitiness of the wine.

We are coming up on tomato season, and this recipe showcases the best of summer tomatoes. Last summer I had a bounty of heirloom tomatoes, so I cored a few batches and froze them whole,on a cookie sheet with the skin on, and stored them in large ziplock bags. After defrosting, the skins peelright off. I made this batch with the frozen tomatoes and it was as good as fresh, enjoy! ~ Nancy Mueller, Charles R Marketeer

Boil 5 large tomatoes for 1 minute. Peel, seed and chop. 

Into a large bowl add:

1/2 cup olive oil

3 garlic cloves, pressed or small dice

1 cup chopped basil leaves

salt and red pepper flakes

Blend ingredients together and let the mixture sit for 2 hours.

Boil 1-pound linguine, fresh is best. Drain and toss with cold tomato mixture. 

Serve immediately with a glass of Charles R Sangiovese and enjoy!
