Wild Wings and Willing Wine!

In our third installment of our fast-food and wine pairing (aka our favorite day of the month), we enjoyed our 2018 Chardonnay with a deliciously devilish array from Buffalo Wild Wings.

Chicken and Chardonnay are one of those seemingly standard pairings that may come to mind when you think of simple food and wine combos, but when we added the complexity of the intensely flavored sauces that the wings (both chicken and cauliflower) are dredged and spun in – ranging from sweet and mild to uncomfortably hot, with spice combinations spanning the globe – this pairing became a(whole)nother thing altogether!

Caribbean jerk, with its dark spice profile and notes of clove was a surprising friend of the Chardonnay. The wine morphed into a lighthearted and quaffable guest – taking on notes of citrus and pepper.

The Adobo, with its smoky chipotle character made for another delectable duo.

The fried pickles and onion rings were far too easy to eat by the handful and wash down with sip after sip of this mid-weight Chardonnay.

The “real” spicy sauces were just a little too spicy for the Chardonnay. This wine is completely dry, and without any discernible residual sugar to go up against the heat of the mango habanero or the Nashville hot sauces, it didn’t get to show of all its best attributes.

All told, this was yet another super fun pairing with lots of surprising finds! When it comes to our Chardonnay, the smoky, peppery, salty, and even flavors of baking spices like clove, cinnamon and nutmeg, are sure fire ways to make it shine from many different angles.
