2 -3 cans black beans, rinsed and drained
1 package frozen organic sweet corn, thawed
1 medium cucumber chopped
4-6 medium tomatoes chopped
Roasted Shishito peppers or jalapeños chopped, add depending on desired spice level
1 bunch of chopped cilantro
Salt and pepper to taste
Chop and blend everything in a large bowl. You can also add balsamic vinegar or salad dressing.
Serve cold with a bottle of 2019 Charles R Sauvignon Blanc.
